Coriander Seeds

Coriander, also known as Chinese parsley and, fresh, as cilantro, is an annual herb in the family Apiaceae. It is widely used in cooking around the world, and the crushed seeds have a unique lemony, citrusy flavor. Described as warm, nutty, spicy, and orange-flavored, coriander seeds are important in many spice blends, such as garam masala, and are frequently used in Indian curries, often with cumin. They are also extensively used in pickling vegetables and making sausages, especially in Germany and South Africa. In Russia and Central Europe, coriander seeds are occasionally used in rye bread, such as Borodinsky bread, as an alternative to caraway. Additionally, coriander seeds are a key ingredient in some Belgian wheat beers.
