Tarragon

Tarragon (Artemisia dracunculus) is a perennial herb of the Asteraceae family. It is particularly well-suited for chicken, fish, and egg dishes. Tarragon is the primary seasoning in Béarnaise sauce. It is also used to flavor a popular carbonated beverage in Armenia, Azerbaijan, Georgia (where it originated), as well as in Russia, Ukraine, and Kazakhstan. This drink, called Tarkhuna, is made from sweet tarragon concentrate and has a bright green color. In Iran, tarragon is used as an ingredient in sabzi khordan (a mix of fresh herbs) and in soups and Persian-style marinades, especially khiar shoor (pickled cucumbers). In Slovenia, tarragon is added to the traditional walnut roll sweet cake called potica. In Hungary, tarragon is used to season a popular chicken soup.
